Yes, these days the market is rampant with many substitutes for milk, cream and butter that you need not bother about adding lactose-free alternatives to your recipes. Lactose Free Cookies, Cakes and Croissants: If you are lactose intolerant, you will be told that anything made from milk should be out of your diet. And you will miss cakes and ice creams more than anything! Don’t worry. You need not miss any dairy item anymore. There are several non-dairy milk alternatives/lactose-free substitutes in the market which you can use for your exclusive “dairy†recipes. Below are some:

1. Cheesecake: You will be asked to abhor this like hell. But, relax. You can have this without symptoms as this is dairy free. You will need the following ingredients – ¾ cup of Almond meal, ¾ cup of white flour, 1 tsp of ground cinnamon, 1/8 tsp of salt, 1/3 cup of honey, ¼ cup oil, ¼ egg replacer powder, 32 oz of soy cream cheese, 1 cup sugar, 1 tsp apple cider vinegar. Heat the over to 375 F and lightly oil a spring-form pan and set it aside. In a bowl, combine almond meal, white flour, cinnamon, salt; in another bowl, mix oil and honey. Add the latter to the dry mixture until you form a dough. Bake the dough for 7 minutes until it is golden brown. Now, turn up the oven to 400 F and make the filling. In another bowl, mix the egg replacer powder with hot water and set aside.
In a large mixing bowl, mix cream cheese, sugar and bring it to a fluffy consistency. Add in the egg replacer mixture and beat for 2 minutes. Next, add the vinegar and beat for about a minute on high speed. Now, pour filling over the crust and then, bake at 400 F for 5 minutes. After 5 minutes, turn down the oven to 275 F and bake for 40 minutes. Allow the cake to cool and chill in refrigerator before serving.
2. Brownie Cake: You will need 1 ½ cups of unbleached flour, ¾ tsp of baking powder, 1 ½ cups of white sugar, 1 tsp of pure unsweetened cocoa powder, ¾ tsp of salt, ½ cup water, ¼ cup plain soy milk or almond milk, ¾ cup canola oil and ½ tsp vanilla extract to prepare this cake. Preheat the over to 350 F and oil the cake pan (9†round) for cake-making. Sift together flour, white sugar, cocoa powder, baking powder and salt. In another bowl, mix water, almond, canola oil and vanilla. Pour the batter into pan and bake for 25 minutes. Allow to cool and refrigerate (if required) before serving.
3. Peanut butter cookies: You need not worry about the butter or milk part here as they are all lactose free. Ingredients needed: 1/3 cup of dairy-free plain soy milk or almond milk, 1 tsp lemon juice, 1 ½ cup crunchy peanut butter, 1 cup packed brown sugar, 1 cup unrefined cane sugar, 2 cups flour, ½ cup oat flour, 1 tsp baking powder, 1 ½ tsp baking soda and ½ tsp salt. Preheat the oven to 375 F and oil the baking sheets. Combine soy milk and lemon juice until the mixture is thick. In another bowl, combine flour, baking powder, baking soda and salt.
Then, using an electric hand mixture, combine peanut butter with the sugars and add the soy milk and other mixtures to it. Mix everything with a wooden spoon and place the mixture in freezer for about 10 minutes. Next, bake the cookies for 10 to 12 minutes or until they get the golden brown color. Once baked, allow the cookies to cool completely before serving.
